Spiced Medallion Cookies

_mg_6855_editedOkay, so let me be completely honest here. The only reason I’m naming them “medallion” is because I dusted them with edible gold dust (click on the image below to get yourself some). Otherwise they’d just be called regular spiced cookies. Which does nothing for the festive spirit, imo.

 

 

 

Apart from this maquillage of festive gold, this recipe is nothing but a tweak on my Sugar Star Cookies. Perfect as an accompaniment to my next post which is a skinny eggnog!

Utensils

 

Ingredients (makes 3 dozen 2cm radius cookies)

1/2 cup sugar
1/4 cup melted jaggery
1/2 cup butter
2 cups atta (wholewheat flour)
1 egg
1/2 tsp vanilla essence
1/4 tsp nutmeg
1/2 tsp cinnamon
1tsp dried ginger
1 clove, crushed and powdered
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Method

  1. Mix all the dry ingredients together with the butter and the egg until it all comes together. Add in the melted jaggery and knead until the dough becomes smooth.
  2. Chill the dough for a few hours before rolling out to 1 cm thickness and use a round cookie cutter (or any shape you fancy) to cut out your cookies. Lay them on your baking tray with some butter paper separated by a few centimetres gap.
  3. Bake at 180 degrees for 15 minutes and until your home smells heavenly. Dust with the gold dust and revel in a little decadence. Happy baking!
